Laiik Makes Greek Food: Kolokythokeftedes (Zucchini Fritters)
This month's recipe: kolokythokeftedes. We dare you to say it three times very fast! Simply put, these fried zucchini balls are the dish for spring and summer. Combining familiar ingredients used widely in Greek cuisine, this herbaceous delight is best served with tzatziki. Ingredients
- 1 pound zucchini
- 200 grams (a little less than 1 cup) of feta cheese
- 1 bunch basil leaves
- 1 bunch dill
- 1 bunch mint leaves
- 2 spring onions
- 2 limes
- 1 teaspoon cumin
- 1 teaspoon chili flakes
- Olive oil
- 2 eggs
- 80 grams (0.4 cups) of all purpose flour
- Salt
- Pepper
Execution
- Line a large bowl with a kitchen towel
- Grate the zucchini into the bowl
- Add a generous amount of salt to assist in removing the water from the zucchini
- Wrap the towel, and squeeze tightly so as to remove as much water as possible
- Transfer to a clean bowl
- Finely chop the green part of the spring onions, the dill, mint and basil leaves and add to the grated zucchini
- Add the zest from the two limes
- Add the chili flakes
- Crumble the feta into the bowl and add two eggs
- Mix until the ingredients are combined
- Add the flour until and gently mix - do not overmix
- Add 3 tablespoons of olive oil to a non-stick pan on medium heat
- Use a tablespoon to scoop balls of the mixture and place in the pan. Gently press so that they form little patties
- Fry on both sides until golden.
- Serve with Greek yogurt mixed with dill, or any spring herb of your choice
